I suggest going the route that the kernel is now going: the last release
candidate and the release should be the same code. That is, no bug fixes go
in, because all the important bugs are fixed, and no-one found new ones. A
few days of testing is probably long enough for this, but it should reduce
the risk of introducing an embarrassing show-stopper, especially if the
release candidates are made easily available for people to test.
